Ingredients:

  • 1 Bag of frozen Italian meatballs
  • 1 Bag of frozen onion and peppers
  • 1 Jar of your favorite marinara sauce
  • 1 Bag of Italian blend cheese, 2 cup size
  • 1 Package of hoagie rolls

 

Directions:

Line the crock pot with a disposable liner. You will be happy you did, as the clean up is a breeze. Just toss the liner and wipe off any condensation.

Add in the bag of meatballs, onion and peppers, and the jar of sauce.

Place on the lid and set to medium or high depending on when you plan to be stopped for the night or for a break.

Allow at least 2 hours cooking time to be sure the meatballs are heated through.

Once it it bubbling, top with the bag of cheese and let it melt.

To serve, pile on the meatballs, sauce, and cheese on the hoagie roll and enjoy!

 

Bonus Crockpot Recipe For Truckers – Loaded Mashed Potatoes Stuffed Meatloaf

That’s right! Loaded mashed potatoes tucked right inside a savory meatloaf. This may sound a lot more difficult than it really is, but give this crockpot recipe for truck drivers a try then kick back and relax like you would at home.

Ingredients:

  • 1 Pound of 80% ground beef
  • 1 ¼ Cups of seasoned bread crumbs
  • 1 Packet of meatloaf seasoning
  • 2 Eggs
  • 1 Bottle ketchup
  • 1 Box of cheddar mashed potatoes
  • 1 Cup of water or milk
  • ½ Cup sour cream (add more water or milk sparingly if still a bit too thick)
  • ½ Cup shredded cheddar cheese
  • Bacon bits to taste

Directions:

First, in a bowl mix together the ground beef, bread crumbs, seasoning packet, and eggs until combined. Set this aside for the moment.

Next, in another bowl mix together the box of potatoes, the water or milk, sour cream, cheese, and bacon bits. If the mixture is still a little thick, slowly add a bit more water or milk to reach the desired consistency.

Then, line the crock pot with a liner and put half of the meat mixture in the bottom.

Next, lightly even it out on and top the layer with the potato mixture. Spread evenly.

Then, add the rest of the meat mixture on top and seal in the sides by pressing the edges all the way around.

Turn on the cooker to high and cover with the lid.

Cook for 2 hours then top with the desired amount of ketchup.

Last, cook on medium for at least another 2 hours or until the ground beef is cooked through. Delicious!

 

How About Microwave Recipes for Truckers – Chopped Beef Baker

Who doesn’t love a great baker! This quick recipe has it all, BBQ beef, cheese, sour cream and of course, bacon bits.

This easy recipe is sure to keep you satisfied however long your trip is.

 

Ingredients:

  • 1 Large baking potato (or more if you want to make several ahead)
  • 1 Cup of BBQ chopped beef
  • Butter or margarine
  • Sour cream
  • Cheese
  • Bacon bits
  • Green onion
  • Salt and pepper

Directions:

Rinse off the potato(es) and poke some holes.

Then, microwave on high for about 3 to 5 minutes depending on the size of the potato.

Next, flip over and cook another 3 to 5 minutes.

Once soft to the touch, remove and let cool to handle.

Then, cut in half long ways and fluff the inside with a fork.

Top with the desired amounts of butter, cheese, salt and pepper, and the cup of chopped beef.

Place back in microwave to heat the beef and melt the cheese.

This recipe will satisfy that craving for enchilada goodness without having to spend valuable time rolling each one up.

Ingredients:

  • 2 Cups of diced deli rotisserie chicken
  • 1 Small diced onion
  • 1 Can of evaporated milk, 15 ounce can
  • 1 Can of cream of chicken soup, 10 ounce can
  • 1 packet of taco seasoning
  • 1 Bag fiesta mix shredded cheese, 2 cup size
  • Flour tortillas

Optional:

  • Jalapenos
  • Black olives
  • Sour cream
  • Salsa
  • Avocado
  • Diced tomatoes

Directions:

First, combine the first 5 ingredients in a bowl with half the bag of cheese.

Then in a microwave safe dish place 1 tortilla in the bottom them spread some of the mixture on top.

Repeat the process until you get to the top of the dish.

Then, top with the remaining cheese and heat on high until the cheese is melted and the filling is bubbling around the sides.

Lastly, top with any of the optional ingredients and serve with tortilla chips or microwave rice and re-fried beans. Perfect!
